On Sunday night I was in the mood for a flavorful, carne asada taco. So I bought about 1-lb of carne asada meat from the grocery store, some uncooked tortillas (I heated them on a pan with a little canola oil), pepper jack cheese, and some bell peppers.
I only marinated the meat for about 1 to 2 hours but it still soaked up a lot of flavor.
We don’t have a grill, so we cooked the meat on our new griddle, which worked great. But I think that technically means we didn’t make carne asada, since it wasn’t cooked on fire, it should be called something else. But no matter!
Carne Asada Marinade
1 cup olive oil
1/4 cup balsalmic vinegar
Fresh squeezed lemon juice from 1 1/2 lemons
2 cloved of garlic finely chopped
1 tsp cumin
1 tsp oregano
1 1/2 tbsp sea salt
Mix all ingredients and pour into ziploc bag with carne asada meat. Refrigerate for at least 1 hour or as long 12 hours.
Cook as desired. We like ours close to well done.
I decided to cook my bell peppers in long thin strips to match the meat. I squeezed 1 large lemon into a pan with the bell peppers and added just a little olive oil. I cooked them on medium/high heat until soft. Then I added cumin, salt, and black pepper.
We use plain Greek yogurt instead of sour cream in our tacos. Yum!
